Ingredients

  • 2 tbsp. Olive Oil
  • 4 cloves Garlic (minced)
  • 1 large Yellow Onion (sliced)
  • 2 cans San Marzano peeled tomatoes (28 oz.)
  • 1 cup chicken stock (or vegetable stock)
  • 1 tbsp. Sugar
  • ¼ cup CF Burger Creamery Heavy Whipping Cream
  • 8 large Fresh Basil Leaves (roughly chopped)
  • ¼ tsp. Dried Oregano
  • ½ tsp. Red Pepper Flakes
  • to taste Kosher Salt and Fresh Ground Black Pepper
  • ⅓ cup Shredded Parmesan Cheese (optional)
Heavy Whipping Cream

Tomato Soup

- Prep Time: 40 min Servings: 4
This tomato soup is a timeless cure for cold or rainy days. Our C.F. Burger Creamery Heavy Whipping Cream gives it that perfect consistency you need to make a tomato soup unlike any other. Don’t forget the grilled cheese for dipping!

Directions

  1. In a heavy bottomed pot, heat olive oil over medium-high heat. Add garlic and saute for 30 seconds - until fragrant. Add onion and cook, stirring as needed, until translucent - about 8 minutes.
  2. Add San Marzano peeled tomatoes (juice and all), chicken stock, and sugar. Bring to a low simmer. Cook uncovered, for 12 minutes or until it has thickened.
  3. Add the heavy cream, basil, oregano, red pepper flakes and season to taste with salt and pepper.
  4. Using an immersion blender (or carefully transfer soup to a blender), puree soup until there are no large chunks left.
  5. OPTIONAL: stir in parmesan cheese and serve topped with buttery croutons.
  6. Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.

This is a simple and quick snack that combines the sweetness of fresh fruit over softly whipped cream. Whether you’re in a hurry for something light and flavorful or you’re looking for a nice snack to wind down with, Berries and Cream using our heavy whipping cream is the perfect solution.

Directions

  1. Combine the sugar, orange juice and rind(if using) into a small pan
  2. Heat and bring to a boil, stirring until the sugar dissolves.
  3. Simmer for about 10 minutes without stirring.
  4. Cool syrup.
  5. Whip cream to medium peaks.
  6. Fold orange syrup into whip cream.
  7. Serve over berries.

- Prep Time: 1 hour Servings: 6
This vanilla pudding is soon to become everybody's favorite dessert! Paired perfectly with fresh berries or served on its own. This perfectly sweetened, easy-to-make recipe is sure to become a staple.

Directions

  1. In a medium heavy saucepan combine sugar and cornstarch. Add half-and-half. Cook and gently stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Gradually stir 1 cup of the half-and-half mixture into egg yolks.
  2. Slowly whisk egg yolk mixture back into half-and-half mixture in saucepan. Bring to a gentle boil; reduce heat. Cook and stir for 2 minutes more. Remove from heat. Stir in butter, vanilla, and sea salt. Pour pudding into 6 individual serving bowls. Cover surface of pudding with plastic wrap. Let stand 45 minutes; serve warm or chill up to 24 hours before serving.

  • ½ cup drained roasted red pepper strips
  • ¾ cup grated tasty cheese
  • 3 green onions, thinly sliced

Muffin Pan Quiche

- Prep Time: 60 min Servings: 6
These muffin pan quiches are the perfect brunch or party finger food to satisfy and relish. The savory sausage blends together flawlessly with the egg, cheese, and cream for a delicious protein option. They are guaranteed to be a crowd favorite as well as a weekend brunch staple.

Directions

  1. Preheat the oven to 180C/160C fan-forced. Grease a 12-hole, ⅓ cup capacity muffin pan.
  2. Using a rolling pin, flatten each slice of bread slightly. Spray each side of bread with oil. Line prepared pan holes with bread, pressing to form a case.
  3. Bake for 10 minutes or until lightly golden and crisp. Remove from the oven.
  4. Meanwhile, heat a large frying pan over medium-high heat. Add chorizo. Cook, turning, for 3 to 4 minutes or until golden and crisp. Transfer to a paper towel to drain.
  5. Whisk the eggs, cream and milk together, and season with salt and pepper.
  6. Divide pepper strips, chorizo, cheese and ⅔ of onion among bread cases. Carefully pour over the egg mixture.
  7. Bake for 20 minutes or until golden and set. Serve quiches sprinkled with remaining onion.
