Muffin Pan Quiche

These muffin pan quiches are the perfect brunch or party finger food to satisfy and relish. The savory sausage blends together flawlessly with the egg, cheese, and cream for a delicious protein option. They are guaranteed to be a crowd favorite as well as a weekend brunch staple.

Directions

  1. Preheat the oven to 180C/160C fan-forced. Grease a 12-hole, ⅓ cup capacity muffin pan.
  2. Using a rolling pin, flatten each slice of bread slightly. Spray each side of bread with oil. Line prepared pan holes with bread, pressing to form a case.
  3. Bake for 10 minutes or until lightly golden and crisp. Remove from the oven.
  4. Meanwhile, heat a large frying pan over medium-high heat. Add chorizo. Cook, turning, for 3 to 4 minutes or until golden and crisp. Transfer to a paper towel to drain.
  5. Whisk the eggs, cream and milk together, and season with salt and pepper.
  6. Divide pepper strips, chorizo, cheese and ⅔ of onion among bread cases. Carefully pour over the egg mixture.
  7. Bake for 20 minutes or until golden and set. Serve quiches sprinkled with remaining onion.
