Directions
- Preheat the oven to 180C/160C fan-forced. Grease a 12-hole, ⅓ cup capacity muffin pan.
- Using a rolling pin, flatten each slice of bread slightly. Spray each side of bread with oil. Line prepared pan holes with bread, pressing to form a case.
- Bake for 10 minutes or until lightly golden and crisp. Remove from the oven.
- Meanwhile, heat a large frying pan over medium-high heat. Add chorizo. Cook, turning, for 3 to 4 minutes or until golden and crisp. Transfer to a paper towel to drain.
- Whisk the eggs, cream and milk together, and season with salt and pepper.
- Divide pepper strips, chorizo, cheese and ⅔ of onion among bread cases. Carefully pour over the egg mixture.
- Bake for 20 minutes or until golden and set. Serve quiches sprinkled with remaining onion.
